From the “Book of Memories” (1595) in the municipal archive of Buonconvento, we find the earliest known recipe for Panpepato, which calls for 15 primary ingredients:
honey, sugar, wheat flour, walnuts, hazelnuts, almonds, candied melon, candied citron, candied orange, lemon zest, coriander, cinnamon, aromatic pepper (Cubeb pepper), cloves, and nutmeg — all mixed together in water.
