ARTICHOKES “ON THE STALK”
An artichoke plant produces 12–15 flowers, the first 5 are used to produce “on the stem” artichokes, which are more flavorful and aromatic. They are lightly blanched in white vinegar to preserve their crunch and natural flavor, then preserved in extra virgin olive oil.
