Passata to make it more full-bodied and dense is “DRYED” from its water.

Datterino tomato, pear tomato, Romanello tomato.

This water is then processed until it is almost transparent, resulting in a very intense tomato flavor, but with a very different texture.

Ideal for risotto and pasta stirring, excellent for cooking fish, leavening and even making cocktails.

Description

Chef AIMO of the starred restaurant “AIMO and NADIA” in Milan, when he was my guest at Cennatoio, told me that one of the most sought-after autumn dishes of irresistible taste by his customers was precisely a crostone of toasted bread soaked in tomato water, plenty of E.V.O. oil, salt and pepper, a simple dish but one that could be worth dinner.
